One apiary, one harvest, a limited number of jars. Blossom honey from our own hives in Svinninge, Österåker — on the edge of the Stockholm archipelago, next to the orchards and mixed meadowland of the area. That is the flowering the bees work, and it is what gives this honey its character.
Three things we do not do
**We do not heat it.** The honey never goes above hive temperature, so the delicate enzymes and aromatics stay where they are.
**We do not filter it.** We strain it — wax and particles out, pollen in. Filtered honey is a different thing: the pollen is removed, and with it the trace of where the honey came from.
**We do not blend it.** No honey bought in from other beekeepers, nothing mixed from several producers. Extraction, straining and bottling all happen here.

- 17 %. Anything above 20 % is not approved, and the assessment scale starts at 16 %, so 17 % sits at the low end of what is achievable. It means the bees had capped the honey fully ripe before we took it: concentrated rather than watery, and it keeps better for it.

Storage
Keep dry at room temperature with the lid on. Honey crystallises naturally over time — stand the jar in a lukewarm water bath, no hotter than 40 °C. Do not boil it.
Important
Do not give honey to children under 1 year. This applies to all honey.

Why your honey may crystallise
Raw, unfiltered honey naturally crystallises — this is a sign it hasn’t been heat-treated. To restore it, place the jar in a 40 °C water bath for 20 minutes. Never microwave.
